Tea Pretsels

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Cream the butter and sugar together.

  2. Add the beaten egg and sifted flour, mixing well.

  3. Let the mixture stand for 1 hour, if possible.

Shape and bake

  1. Break off pieces of dough and roll them into pencil shapes.

  2. Bring the ends together to the center of the dough, pressing them down.

  3. Brush the top with beaten egg.

  4. Optionally, sprinkle almonds on top before baking.

  5. Bake in a moderate oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and give the cookies a tender, rich texture.
Flour
Provides the structure that holds the pretzel shapes together as they bake.
Egg
Binds the dough and, brushed on top, promotes browning and a glossy finish.
Sugar
Adds sweetness and helps the dough brown while creaming with the butter.

The step that matters

Pressing the ends into the dough. The ends must be pressed firmly so they stay attached during baking; loose ends can separate as the butter melts and the dough spreads.
