What each ingredient does

Neck of mutton
Provides the main meat, and its fat and connective tissue enrich the broth as it simmers.
Onions
Melt down during the long simmer, adding sweetness and body to the broth.
Mealy potatoes
Break down gently at the surface, thickening the stew and softening its texture.

The step that matters

Keeping the water level just below the mutton. Covering the meat with water dilutes the broth and boils the meat rather than gently simmering it. Barely covering it keeps the flavour concentrated and the meat tender.

Swap the onion

How well each one fits the dish's main ingredients (mutton, pepper, potato):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, pepper, potato. Candidates are from the same food group and used in at least 100 recipes.
