Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Sweetbread Cutlets

Ingredients

Directions

  1. Boil the sweetbreads in water with a little coarse sea salt for 30 minutes.

  2. Once cold, cut the sweetbreads into even slices.

  3. Brush each slice with yolk of egg and dip into seasoned fine bread crumbs.

  4. Fry the slices until they are a light brown.

  5. Arrange the cutlets in a dish, placing them high in the center.

  6. In the pan, make a gravy by thickening with flour and adding sherry or Madeira just before serving.

  7. If desired, trim slices of cold boiled tongue to match the cutlets and place each cutlet on a slice of tongue.
