Roasted Reed Birds

Ingredients

Directions

  1. Prepare the birds by cutting and drawing them like chickens.

  2. Wash the birds thoroughly and dry them.

  3. Make a dressing by mixing bread crumbs, pepper, coarse sea salt, and enough butter to bind the crumbs together.

  4. Optionally, add chopped onion and finely powdered sweet herbs to the dressing.

  5. Stuff the birds with the dressing and sew them up.

  6. Place the birds on a spit and baste with butter while roasting.
