Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and thickens the pudding as it cooks, giving it body.
Eggs
Set when baked, binding the pudding into a custard-like texture.
Nutmeg
Adds warm, aromatic flavour to the pudding.

The step that matters

Bake until set. Egg proteins coagulate as the custard heats, so pulling the dish too early leaves it runny, while overbaking can make it tough and weepy. Watch for a firm centre rather than relying only on time.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, wine, butter):

  1. Tarragonfits about as well
  2. Nutmegthe original
  3. Cinnamonfits about as well
  4. Parsleyfits about as well

Fit is the average pairing score against egg, wine, butter. Candidates are from the same food group and used in at least 100 recipes.
