Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Beat the egg yolks and sugar together until well combined.

  2. Add the cold water and flour to the yolk mixture and stir until smooth.

  3. In a separate bowl, beat the egg whites until frothy.

  4. Gently fold the beaten egg whites into the yolk mixture.

  5. Dissolve the baking soda in a little water and add it to the batter.

  6. Flavor with vanilla or lemon essence.

Bake

  1. Pour the batter into a greased cake pan and bake for about 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air and give the cake its light, airy structure, while yolks add richness.
Sugar
Sweetens the cake and helps the egg yolks combine smoothly into the batter.
Flour
Forms the cake's structure once it sets in the oven.
Baking soda
Reacts with the batter to produce gas that helps the cake rise.

The step that matters

Folding in the egg whites. Stirring vigorously knocks out the air trapped in the whipped whites, so the cake rises less and turns dense. Fold gently with a spatula, cutting through and turning the batter until just combined.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour):

  1. Raisinfits better
  2. Vanillathe original
  3. Lemonfits less well
  4. Figfits less well

Fit is the average pairing score against egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
