What each ingredient does

Red cabbages
Provides the main bulk and crisp texture that the brine and vinegar soften and preserve.
Coarse sea salt
Draws water out of the shredded cabbage, firming it and seasoning it before pickling.
Vinegar
Provides the acidity that preserves the cabbage and gives the pickle its sharp flavour.
Ginger
Adds warm, aromatic spice to the pickling liquid.

The step that matters

Hanging the salted cabbage for 12 hours. Salt draws water out of the shredded cabbage through osmosis. Letting it drain fully firms the texture and keeps the finished pickle from becoming watery and diluting the vinegar.
