What each ingredient does

Ripe tomatoes
Form the main body of the pickle and absorb the brine and vinegar flavour.
Coarse sea salt
Draws water out of the tomatoes and seasons them during the brine soak.
Vinegar
Provides acidity that preserves the tomatoes and gives the pickle its sharp flavour.
Onions
Add sweetness and savoury bulk that balances the sharp vinegar.
Mustard seed
Adds a sharp, pungent aroma and flavour to the pickling liquid.
Cloves
Contribute warm, aromatic spice flavour to the pickle.

The step that matters

Soaking the tomatoes in strong brine for eight days. The brine must be strong enough to draw water out and season the tomatoes through. A weak brine can let the tomatoes spoil or stay bland, so the concentration and full soaking time matter.

Swap the clove

How well each one fits the dish's main ingredients (tomato, onion, vinegar, mustard):

  1. Garlicfits better
  2. Capersfits better
  3. Tarragonfits better
  4. Clovethe original

Fit is the average pairing score against tomato, onion, vinegar, mustard. Candidates are from the same food group and used in at least 100 recipes.
