Why it works: Ginger and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

What each ingredient does

White sugar
Provides the sugar that yeast ferments into alcohol and carbon dioxide.
Fresh yeast
Carries out the fermentation that turns the sugary liquid into wine.
Stoned raisins
Add natural sugars and fruit flavour to the wine as it ages.
Lemons
Add acidity and brightness that balance the sweetness of the sugar.

The step that matters

Adding the yeast-covered toast to the cooled liquid. If the liquid is still hot when the bread is added, the heat can kill the yeast and fermentation may never start. Letting it cool first keeps the yeast alive so it can convert the sugar.

Swap the raisin

How well each one fits the dish's main ingredients (sugar, ginger, lemon, bread):

  1. Orangefits better
  2. Limefits better
  3. Figfits better
  4. Raisinthe original

Fit is the average pairing score against sugar, ginger, lemon, bread. Candidates are from the same food group and used in at least 100 recipes.
