Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spring lamb cutlets
Provide the cooked meat that the coating is set around.
Blond chaudfroid sauce
Forms a thick, glossy coating that sets on the cutlets as it chills.
Tomato puree
Tints the chaudfroid sauce light red and adds tomato flavour.
Jelly
Sets into a clear glaze that seals and protects the decorated surface.

The step that matters

Thicken the sauce on ice. The sauce must thicken enough to cling to the cutlets without running off. Stirring over ice cools it evenly, and if it is too thin the coating will be patchy and slide off as it sets.

Swap the tomato

How well each one fits the dish's main ingredients (lamb, butter, sauce, truffle):

  1. Asparagusfits better
  2. Potatofits about as well
  3. Shallotfits about as well
  4. Tomatothe original
