What each ingredient does

Milk
Forms the liquid body of the punch and, once frozen, its creamy, smooth texture.
Sugar
Adds sweetness and lowers the freezing point, keeping the frozen mixture soft enough to spoon.
Whipped cream
Adds fat and air, giving the frozen mixture a lighter, richer texture.
Rum
Adds flavour and alcohol, which also keeps the mixture from freezing rock-hard.
Brandy
Adds flavour and alcohol, further softening the frozen texture.

The step that matters

Slowly add the rum and brandy, mixing well. Alcohol lowers the freezing point, so adding spirits to a nearly frozen mixture can cause it to melt or separate if rushed. Adding them slowly and mixing well keeps the texture even and prevents pockets of liquid from refreezing into ice.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, rum, brandy, cream):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well

Fit is the average pairing score against milk, sugar, rum, brandy, cream. Candidates are from the same food group and used in at least 100 recipes.
