What each ingredient does

Oranges
Provide the main juice, giving the sherbet its sweet-tart citrus body and flavour.
Lemons
Add acidity that brightens the citrus flavour and balances sweetness.
Curacao
Adds orange liqueur flavour and alcohol, which keeps the frozen sherbet softer.
Kirsch
Adds cherry-like aroma and alcohol, which keeps the frozen sherbet softer.

The step that matters

Freezing the sherbet before adding the spirits. Alcohol lowers the freezing point, so adding Curacao and kirsch to a fully frozen mixture is what keeps the sherbet scoopable; mixing them in too early or too late changes its texture.

Swap the bitter orange

How well each one fits the dish's main ingredients (orange, lemon):

  1. Limefits better
  2. Mangofits better
  3. Blueberryfits better
  4. Bitter orangethe original

Fit is the average pairing score against orange, lemon. Candidates are from the same food group and used in at least 100 recipes.
