Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast-beef bone
Releases gelatin and savory flavour into the water during long simmering, giving the broth body.
Beefsteak pieces
Add meaty flavour and richness to the broth as they simmer.
Turkey or chicken rack
Adds poultry flavour and gelatin to the broth.
Turnips
Contribute mild sweetness and earthy flavour as they soften and break down.
Flour
Thickens the broth slightly when stirred in as a slurry with water.

The step that matters

Skimming off the fat. Fat rises and sets on the surface of a long-simmered broth. Removing it before the flour is added keeps the soup clean-tasting and prevents a greasy mouthfeel.

Swap the onion

How well each one fits the dish's main ingredients (beef, turkey, carrot, turnip, clove, pepper, flour):

  1. Leekfits better
  2. Parsnipfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against beef, turkey, carrot, turnip, clove, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
