What each ingredient does

Turnips
Soften and add sweetness and body to the soup's vegetable base.
Carrots
Add natural sweetness and body as they soften during frying and simmering.
Onions
Build savory depth as they fry gently in butter until light yellow.
Butter
Carries the frying flavor and adds richness to the vegetable base.
Celery
Contributes aromatic, savory flavor as it softens in the pot.
Leeks
Add a mild onion-like sweetness that deepens the broth.

The step that matters

Skimming during the simmer. Scum rising from the simmering vegetables can cloud the broth and carry bitter or off flavors. Skimming it off keeps the soup clear and clean-tasting over the long 3-hour cook.

Swap the clove

How well each one fits the dish's main ingredients (turnip, carrot, onion, butter, celery, leek, garlic):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits better
  4. Clovethe original

Fit is the average pairing score against turnip, carrot, onion, butter, celery, leek, garlic. Candidates are from the same food group and used in at least 100 recipes.
