Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix bread crumbs, salt, pepper, butter, parsley, and beaten egg yolk.

  3. Stuff the shad with the mixture and sew it up or tie it with string.

Bake and serve

  1. Place the stuffed shad in a baking dish, pour water and some butter over it.

  2. Bake for 1 to 1¼ hours, basting occasionally.

  3. Garnish with slices of lemon and watercress before serving.

What each ingredient does

Shad
Serves as the main fish, cooked whole so the stuffing sits inside it.
Bread crumbs
Absorb the butter and egg yolk to form a moist, binding stuffing.
Egg yolk
Binds the stuffing together so it holds its shape during baking.
Butter
Adds richness and moisture, and helps the fish brown as it bakes.

The step that matters

Basting during the bake. Basting with butter and pan liquid keeps the lean fish moist over the long bake and helps the surface brown evenly, reducing the chance of dry, tough flesh.
