What each ingredient does

Egg yolks
Emulsify the oil and vinegar into a smooth, rich dressing.
Raw egg white
Frothed and folded in, it lightens the dressing and adds volume.
Salad oil or butter
Provides fat that gives the dressing its smooth, creamy body.
Vinegar
Adds acidity that sharpens the flavour and balances the richness of the fat.
Mustard
Helps hold the emulsion together and adds a sharp, savoury bite.
Cold boiled fish
Forms the main body of the dish, dressed with the sauce.

The step that matters

Folding in the egg white. Frothed egg white deflates quickly, so it should be folded in gently just before serving to keep the dressing light rather than stirring it in and losing the air.

Swap the lettuce

How well each one fits the dish's main ingredients (fish, egg, butter, pepper, mustard, sugar, vinegar):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Shallotfits about as well
  4. Lettucethe original

Fit is the average pairing score against fish, egg, butter, pepper, mustard, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
