Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Stew the chicken until tender and thicken the gravy.

  2. Remove the largest bones and scrape the meat from the neck and backbone.

Assemble the pie

  1. Line a 4 or 6-quart pudding dish with biscuit dough, about ¼ inch thick.

  2. Layer part of the chicken in the dish, add butter, salt, pepper, and sliced boiled eggs.

  3. Add the remaining chicken and season again; include new potatoes if desired.

  4. Pour the gravy over the chicken, ensuring it fills the dish.

  5. Cover with a crust of biscuit dough, making a hole in the center the size of a teacup.

Bake and serve

  1. Brush the top with beaten egg white and bake at 400°F (200°C) for 30 to 45 minutes.

  2. Garnish with small celery leaves arranged in a circle.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body of the filling, tender meat that the gravy surrounds.
Biscuit dough
Forms the crust, rising and setting into a tender, flaky layer over the filling.
Gravy
Adds moisture and savoury flavour, keeping the filling from drying out in the oven.
Eggs
Add richness and body to the filling once sliced and layered in.
Egg white
Brushed on top to help the crust take on a golden browning.

The step that matters

Pouring the gravy over the chicken. The gravy must fill the dish so the filling stays moist as it bakes. Gaps let the chicken dry out and leave the pie under-saucy.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, butter, pepper, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, butter, pepper, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
