Why it works: Turnip and parsnip match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 590 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
To Boil Corned Beef
Ingredients
Directions
Prepare the beef
If the beef is not pre-corned, soak it in cold water overnight.
Place the beef in a pot and cover it with cold water.
Bring the pot to a boil over high heat in about 30 minutes. Remove any scum that forms on the surface before boiling.
Boil and cook the vegetables
Reduce the heat and let it boil slowly until tender, about 2.5 hours.
Skim the fat from the pot.
Transfer some liquid to another kettle. Add the cabbage, turnips, carrots, and parsnips to the kettle with the skimmed liquid.
About 30 minutes before serving, add peeled potatoes to the beef pot.
Cool or serve
If not serving hot, let the beef cool in the pot. Drain the beef in a colander and cover with a cloth.
Serve the beef with horseradish, pickles, and sliced boiled beets with vinegar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Corned beef
- Provides the main meat, which becomes tender through slow simmering in water.
- Cabbage
- Adds bulk and mild sweetness as it softens in the cooking liquid.
- Turnips
- Add body and a mild sweetness as they become tender in the broth.
- Potatoes
- Absorb the seasoned broth and turn soft and starchy when simmered.
The step that matters
Reduce the heat and boil slowly. A hard, rapid boil toughens the meat's muscle fibers and can make the beef stringy. A gentle simmer lets connective tissue break down slowly, leaving the beef tender.
Swap the potato
How well each one fits the dish's main ingredients (beef, horseradish, cabbage, turnip, carrot, parsnip, vinegar):
