Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Boned Leg of Mutton Roasted

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the leg

  1. Remove the bone from the leg of mutton, keeping the skin intact if possible.

  2. Trim off most of the fat.

  3. Stuff the cavity with a stuffing similar to that used for fowls, adding the minced onion.

  4. Sew the leg closed to prevent the stuffing from falling out.

  5. Tie the leg securely and place it in a roasting pan.

Roast and season

  1. Add 1 cup of hot water to the pan and roast in a 350°F (175°C) oven, basting occasionally.

  2. Season with salt and pepper when partially cooked.

  3. Once fully cooked, transfer the leg to a warm platter.

Make the gravy and serve

  1. Skim the grease from the drippings, add 1 cup of water, and thicken with dissolved flour.

  2. Serve the gravy in a gravy dish alongside currant jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton leg
Provides the main meat, which becomes tender and juicy during slow roasting.
Onion
Adds aromatic flavor to the stuffing as it cooks inside the meat.
Flour
Thickens the drippings into a smooth gravy.

The step that matters

Basting the leg while it roasts. Basting spoons hot liquid and fat over the surface, keeping the meat moist and helping it brown. Without it the outside can dry out before the centre is cooked.

Swap the currant

How well each one fits the dish's main ingredients (mutton, onion, pepper, flour):

  1. Limefits better
  2. Lemonfits better
  3. Mangofits better
  4. Currantthe original

Fit is the average pairing score against mutton, onion, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
