What each ingredient does

Lamb
Slow stewing turns the connective tissue tender and gives the broth body and rich flavor.
Salt pork
Renders fat and salty flavor into the stew, adding depth to the gravy.
Potatoes
Soften during stewing and add starch that helps lightly thicken the liquid.
Flour
Starch that thickens the gravy as it heats, giving it a smooth, coating body.

The step that matters

Thicken the gravy with flour moistened with milk. Flour lumps if added dry; mixing it smooth with milk first lets the starch disperse evenly, so it thickens the gravy without clumps.
