Cream Fritters

Ingredients

Directions

Make the batter

  1. In a bowl, stir the egg whites into the cream, alternating with the flour.

  2. Add the nutmeg and salt, and beat the mixture hard for 2 minutes until thick.

Fry and serve

  1. In a frying pan, heat plenty of sweet lard.

  2. Drop a spoonful of batter for each fritter into the hot lard and fry until golden.

  3. Drain the fritters and serve on a hot, clean napkin with jelly sauce.

  4. Pull them open to eat, rather than cutting.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Trap air when beaten, giving the fritters a light, airy structure.
Cream
Adds moisture and richness, keeping the batter tender inside.
Prepared flour
Provides structure that sets around the air and liquid as the fritters fry.
Sweet lard
Conducts heat for frying, browning the outside and crisping the surface.

The step that matters

Beat the batter hard until thick. Beating incorporates air into the egg whites and cream, which gives the fritters their lift. Under-beaten batter stays dense and flat, so the fritters come out heavy.

Swap the nutmeg

How well each one fits the dish's main ingredients (cream, egg, flour):

  1. Nutmegthe original
  2. Jalapenofits about as well
  3. Capersfits less well
  4. Turmericfits less well

Fit is the average pairing score against cream, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
