Ruche En Meringue

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Trace the desired sizes on the greased and floured baking sheets using a pencil.

  3. Using a piping bag, create cordons for the base of the meringue.

  4. For the top, mark smaller shapes to create a tapered effect.

  5. Let the meringue dry overnight.

  6. Make meringue with 9 eggs as you did previously and stack the pieces.

  7. Smooth the surfaces and decorate with yellowed Italian meringue or regular meringue.

  8. Add a toasted almond for the body, a raisin for the head, and gelatin wings.

  9. Let it dry again before serving.
