What each ingredient does

Plums
Make up the fruit body of the preserve and supply its main flavor.
Syrup
Adds sweetness and moisture, helping the fruit keep its shape and taste in the jar.

The step that matters

Sterilize for 15 minutes. Heat processing for the full time destroys spoilage microbes and helps the jars seal properly. Shorter or cooler processing can leave live microbes that spoil the preserve later, so the time should not be cut short.
