What each ingredient does

Salmon
Forms the main body and flavor of the timbale.
Beaten eggs
Set when heated, binding the mixture into a firm, sliceable shape.
Hard-boiled eggs
Add body and a firmer, denser texture to the mixture.
White sauce
Adds moisture and richness to the molded timbale when served.
Lemon juice
Adds acidity that brightens the rich salmon and egg flavors.

The step that matters

Bake the molds in a water bath. Baking the molds in a dish with boiling water surrounds them with gentle, even heat. Egg proteins set smoothly this way, while overheating can make the timbales curdle, crack, or turn rubbery.

Swap the white pepper

How well each one fits the dish's main ingredients (salmon, egg, sauce, lemon, parsley):

  1. Capersfits better
  2. Dillfits better
  3. Tarragonfits better
  4. White pepperthe original
