Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the liquid into a smooth, glossy sauce as it heats.
Butter
Adds fat for a rich mouthfeel and smooth finish.
Beaten egg yolks
Enrich and thicken the sauce, adding body and richness.
Lemon juice
Adds acidity that brightens the flavour and cuts the richness.

The step that matters

Adding the beaten egg yolks. Egg yolks can curdle or scramble if the sauce is too hot or boils hard after they go in. Stir gently and keep the heat low so they thicken the sauce smoothly.
