Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provide the main protein, which cooks through during fricassee and then browns in the butter.
Butter
Carries the onion and garlic flavour and browns the chicken, adding richness.
Onion
Softens and sweetens as it cooks, forming the aromatic base of the sauce.
Flour
Thickens the butter and curry mixture into a sauce that clings to the chicken.
Curry powder
Supplies the spiced aroma and flavour that define the curry sauce.

The step that matters

Brown the chickens in the butter mixture. Browning needs direct contact with a hot surface and a dry exterior; crowding or wet chicken steams instead, leaving pale, less flavourful meat. Browned surfaces add savoury depth through the Maillard reaction.

Swap the clove

How well each one fits the dish's main ingredients (chicken, butter, onion, garlic, flour, pepper, rice):

  1. Turmericfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against chicken, butter, onion, garlic, flour, pepper, rice. Candidates are from the same food group and used in at least 100 recipes.
