Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the biscuits

  1. Prepare biscuit dough.

  2. Cut the dough into square pieces.

  3. Bake the pieces in a 400°F (200°C) oven until golden.

  4. Split the baked biscuits.

  5. Place them on a platter.

  6. Pour gravy over the biscuits.

  7. Add the chopped chicken in the center.

Make the filling

  1. Combine the chicken liquid in a separate pot.

  2. Thicken the liquid with cornstarch.

  3. Add salt, pepper, parsley, and chopped mushrooms to the mixture.

  5. Top the dish with fine bread crumbs.

  6. Brown in a 350°F (175°C) oven until the top is golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the chicken liquid into a smooth, body-rich sauce as it heats.
Fine bread crumbs
Form a crisp, golden topping that browns in the oven.
Cooked chicken
Provides the main protein and savory bulk of the filling.
Chicken liquid
Supplies the savory base that the thickened sauce is built on.

The step that matters

Thicken the liquid with cornstarch. Cornstarch must be heated in liquid to gelatinize its starch and thicken. If it is added without enough heat or stirring, it stays lumpy or stays thin, so the filling comes out either runny or clumpy.

Swap the parsley

How well each one fits the dish's main ingredients (biscuit, chicken, pepper, mushroom, bread):

  1. Thymefits better
  2. Garlicfits better
  3. Marjoramfits about as well
  4. Parsleythe original

Fit is the average pairing score against biscuit, chicken, pepper, mushroom, bread. Candidates are from the same food group and used in at least 100 recipes.
