Boiled Ham

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the ham

  1. Soak the ham in cold water overnight.

  2. In the morning, remove the ham, wipe it, and place it in a saucepan covered with fresh cold water.

Boil and finish

  1. Bring the water to a boil and let it simmer for about 3 hours.

  2. Remove the skin from the ham and sprinkle it with sugar.

  3. Make a few incisions on the surface and lightly coat it with fine bread crumbs, sprinkling white pepper over it.

  4. Bake the ham in a 400°F (200°C) oven until well browned.

  5. Let the ham cool completely before slicing it into delicate slices.

What each ingredient does

Ham
Is the main cooked meat, which becomes tender through long simmering and then sliced.
Sugar
Sweetens the surface and helps it brown during baking.
Fine bread crumbs
Form a light crust on the surface that adds texture and helps it brown.

The step that matters

Bake until well browned. Sugar and the bread crumb coating brown in the hot oven through the Maillard reaction and caramelization. Stopping too early leaves the surface pale, while too long can scorch the sugar and crumbs.

Swap the white pepper
