Sweet-breads

Ingredients

Directions

Prepare

  1. Parboil the sweetbreads in boiling water for five minutes, then remove the skin.

  2. Transfer the sweetbreads to cold water until completely cooled.

  3. Slice the sweetbreads, ensuring the slices are not too thin.

Fry and make the gravy

  1. Roll the slices in egg, then in bread crumbs mixed with parsley.

  2. Fry in a mixture of butter and lard (more lard than butter) for twenty minutes until golden brown.

  3. Remove from the pan and add more butter to the gravy.

  4. Stir in a little milk and enough cornstarch to thicken the gravy to the consistency of cream.

What each ingredient does

Sweetbreads
Form the main body of the dish, becoming tender when parboiled and then fried.
Egg
Binds the bread crumbs to the slices so the coating holds during frying.
Bread crumbs
Form a crisp, golden coating that browns in the hot fat.
Butter
Adds richness and flavor, and helps the coating brown in the pan.
Lard
Provides a high-heat frying fat that browns the coating evenly.
Cornstarch
Thickens the milk-based gravy to a creamy consistency.

The step that matters

Thickening the gravy with cornstarch. Cornstarch must be stirred in gradually and brought to a simmer so its starch granules swell and thicken the liquid. Adding too much at once can leave lumps or an overly thick, pasty gravy.

Swap the parsley

How well each one fits the dish's main ingredients (egg, bread, butter, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Parsleythe original
  4. Capersfits about as well

Fit is the average pairing score against egg, bread, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
