Directions

Make the filling

  1. Combine sweet-breads, mushrooms, calf brains, stock, and corn starch in a pan.

  2. Cook slowly for 10 minutes, stirring constantly.

  3. Add cream, egg yolks, salt, pepper, and nutmeg, then stir for 2 minutes over heat.

  4. Transfer the mixture to a flat platter and let it cool completely.

Shape and coat

  1. Divide the cooled mixture into six parts and shape each part into a cylinder.

  2. Roll each cylinder in fine bread crumbs, dip it in beaten egg, then roll it in bread crumbs again.

Fry and serve

  1. Place the croquettes in a wire frying basket, ensuring they do not touch.

  2. Fry in boiling fat for about 3 minutes until golden brown.

  3. Serve with cream or tomato sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet-breads
Forms the soft, tender body of the filling.
Egg yolks
Bind the filling and help it set when heated.
Cream
Adds moisture and richness to the filling.
Corn starch
Thickens the stock so the filling holds its shape.
Fine bread crumbs
Form a crisp, golden outer coating when fried.

The step that matters

Let the filling cool completely. A warm, loose mixture will not hold its cylinder shape and may break apart during coating and frying. Chilling firms the starch-thickened filling so it can be shaped cleanly.

Swap the nutmeg

How well each one fits the dish's main ingredients (bread, mushroom, corn, cream, egg, pepper):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Celeryfits less well
  4. Marjoramfits less well

Fit is the average pairing score against bread, mushroom, corn, cream, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
