What each ingredient does

Round beef
The main meat, which absorbs the cure slowly over the days it rests.
Saltpetre
Helps the meat keep its red colour and slows spoilage during the long cure.
Fine salt
Draws moisture out of the meat and seasons it, helping preserve it during curing.
Coarse sugar
Balances the harshness of the salt and adds a mild sweetness to the meat.
Juniper berries
Add a resinous, aromatic flavour that defines the spiced character of the cure.

The step that matters

Rubbing the salt daily for 12 days. Salt draws moisture out and carries the cure inward. If the meat is not turned and rubbed every day, the cure spreads unevenly, leaving some areas under-cured and more open to spoilage.

Swap the mace

How well each one fits the dish's main ingredients (beef, sugar, pepper, clove, nutmeg):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against beef, sugar, pepper, clove, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
