Scalloped Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Scald the tomatoes, remove the skins, and slice them.

  2. Butter a pudding dish and layer the sliced tomatoes and bread crumbs alternately.

  3. Season each layer with butter, coarse sea salt, black pepper, and minced onion (add parsley if desired).

  4. Dot the top with bits of butter, cover with a plate, and bake at 350°F (175°C) for 45 minutes.

  5. Remove the cover and brown the top before serving.
