Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Grease a pie plate with butter.

  2. Cover the bottom with a layer of bread crumbs.

  3. Break as many eggs as you can into the plate without them touching.

  4. Cover the eggs with another layer of bread crumbs.

  5. Add pepper and salt, and place small bits of butter on top.

  6. Bake in a hot oven at 400°F (200°C) for five minutes.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
