What each ingredient does

Potatoes
Supply starch and body, which boiling and mashing break down into material the yeast can work on.
Sugar
Provides sweetness and readily available food for the yeast during fermentation.
Yeast cakes
Ferment the sugars into alcohol and carbon dioxide, giving the drink its alcoholic character and fizz.
Hops
Add bitterness and aroma that balance the sweetness of the potato mixture.

The step that matters

Set in a warm place until well fermented. The yeast needs time and warmth to convert the sugars into alcohol and carbon dioxide. Bottling before fermentation is complete leaves the drink sweet and flat, and the trapped gas can build pressure in the bottles.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar):

  1. Mustardfits better
  2. Cucumberfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against hops, sugar. Candidates are from the same food group and used in at least 100 recipes.
