White Fruit Cake

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Beat the egg whites until stiff peaks form.

  4. Chop the raisins, almonds, dates, and citron, then flour the fruit to prevent sinking.

Make the batter

  1. Gently fold the egg whites into the butter and sugar mixture.

  2. Add the milk and flour alternately, mixing until just combined.

  3. Stir in the baking powder and the floured fruit.

Bake

  1. Pour the batter into two greased bread pans.

  2. Bake for 1 to 2 hours, or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites add lift and an airy structure to the batter.
Butter
Creaming with sugar traps air and gives the cake a tender, rich crumb.
Flour
Provides the structure that holds the cake together as it sets in the oven.
Baking powder
Releases gas during baking, helping the cake rise and become light.
Sugar
Sweetens the cake and helps create a soft, tender texture when creamed with butter.
Raisins
Add chewy pieces of fruit and moisture throughout the cake.

The step that matters

Folding in the egg whites. Whipped whites hold air that gives the cake its lift. Stirring them in vigorously knocks that air out, leaving a dense cake. Fold gently so the batter stays light.

Swap the dates

How well each one fits the dish's main ingredients (butter, sugar, milk, flour, egg, raisin, almond):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Datesthe original

Fit is the average pairing score against butter, sugar, milk, flour, egg, raisin, almond. Candidates are from the same food group and used in at least 100 recipes.
