Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Sift the flour and baking powder twice.

  2. Add the sugar, then rub in the butter.

  3. Mix in the milk rapidly.

  4. Place the dough on a well-floured board and divide it into six parts.

  5. Roll out each part to fit buttered pie plates.

  6. Place a layer of dough in each plate, butter it, and cover with another layer.

Bake and serve

  1. Bake in a hot oven at 400°F (200°C).

  2. Once done, separate the double cakes and add the fruit while hot.

  3. Serve immediately.

Prepare the fruit

  1. Sprinkle the sugar on the berries at least half an hour before using.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough once mixed with liquid.
Baking powder
Releases gas in the oven so the cakes rise and become light.
Butter
Rubbed into the flour to add tenderness and richness to the layers.
Milk
Hydrates the flour so the dough holds together and bakes moist.
Berries
Add moisture, tart flavor and fruitiness to the finished shortcake.

The step that matters

Mix in the milk rapidly. Handling the dough quickly keeps it tender, because overworking flour develops gluten and makes the cakes tough. Quick mixing also keeps the baking powder active for a good rise.
