What each ingredient does

Cucumbers
Form the bulk of the pickle and, after salt soaking, become firm and crisp-textured.
Coarse sea salt
Draws water out of the cucumber pieces during soaking, firming their texture before boiling.
Vinegar
Provides the sour acidity that defines the pickle and helps preserve it.
White sugar
Balances the vinegar's sharpness and helps build the sweet syrup that the cucumbers absorb.
Cassia buds
Add a warm, spiced aroma to the syrup as it infuses the cucumbers.

The step that matters

Boil the cucumbers in the syrup until they are clear. Boiling too briefly leaves the pieces opaque and under-infused, while boiling too long softens them. Sugar syrup gradually replaces water in the cucumber tissue, so the pieces turn translucent as they take up sugar.

Swap the cassia

How well each one fits the dish's main ingredients (cucumber, vinegar, sugar):

  1. Tarragonfits better
  2. Cinnamonfits better
  3. Peppermintfits better
  4. Cassiathe original

Fit is the average pairing score against cucumber, vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
