What each ingredient does

Brown sugar
Provides the sweetness and forms the sugar crystals that make the candy set.
Milk
Adds moisture and creaminess, softening the sugar for a smoother texture.
Butter
Adds fat that makes the finished maple cream tender and smooth.

The step that matters

Cook until the mixture hardens in water but is not crisp. Cooking concentrates the sugar, so stopping at the right point sets the firmness. Stopping too early leaves it runny, and cooking too long makes it hard. Beating while it cools then forms fine crystals for a smooth, creamy texture.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, milk, walnut, butter):

  1. Almondfits better
  2. Pecansfits better
  3. Pistachiofits better
  4. Nutsthe original

Fit is the average pairing score against sugar, milk, walnut, butter. Candidates are from the same food group and used in at least 100 recipes.
