Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Roast thin slices of pork until cooked.

  2. Remove the pork and add potato slices to the fat with water.

  3. Season the potatoes with the pork drippings.

  4. Cut the pork chops in half and leave them whole.

  5. In a pot, combine water, black pepper, salt, and garlic if desired.

  6. Cover and boil for 45 minutes.

  7. Transfer to the oven and roast until browned.
