Why it works: Pineapple and rum work together. They rank in the top 2% of all ingredient pairs, and cooks put them together in 451 recipes. Both carry ethyl isobutyrate, which smells fruity, ethereal. The science ↓

Ingredients
Directions
Prepare
Peel the lemons very finely and steep the peel overnight in the rum.
Infuse the tea in 1 pint of boiling water for 4-5 minutes.
Make the punch
Pour the tea infusion over the sugar in a large bowl.
Add 1 pint of lemon juice and 4 quarts of cold water to the bowl.
Stir and then pour in the spirits.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Fresh lemons
- Peel oils give aroma, and the juice adds the sharp acidity that balances the sweetness.
- Refined lump sugar
- Provides sweetness and balances the acidity of the lemon and the bitterness of the tea.
- Gunpowder tea
- Adds tannins, giving the punch structure, dryness and a slight astringency.
- New milk
- Its proteins bind with tannins and acids, softening the punch and clarifying it as it settles.
- Old pineapple rum
- Forms the main spirit base, carrying the flavour of the lemon peel and the other spirits.
The step that matters
Adding the boiling milk. Hot milk can curdle in an acidic, alcoholic mix if it clumps. Pouring it in while stirring constantly disperses the proteins so they bind to tannins and acids evenly, clarifying the punch instead of leaving curds.
