What each ingredient does

Calf's liver
Forms the main body of the farce and gives it its rich, savory flavor.
Lean veal
Adds mild meatiness and a finer, more delicate texture to the mixture.
Bacon
Contributes fat and smoky flavor, keeping the farce moist as it cooks.
Butter
Adds fat for richness and helps the meats cook gently without drying.
Egg yolk
Binds the mixture so it holds together and sets when cooked.

The step that matters

Pounding and sieving the cooked mixture. Cooked liver and meat are firm and fibrous; pounding and pushing them through a sieve breaks fibers into a smooth, even paste, which gives the farce its fine texture.
