Why it works: Corn and wheat match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 465 recipes. Both carry hexanal, which smells green, grassy. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the cornmeal mixture

  1. Pour 1½ cups of water over the corn meal, salt, sugar, and butter (if used).

  2. Heat the mixture gradually to boiling and cook for 20 minutes in a double boiler.

  3. Allow the mixture to cool to room temperature.

Make the dough

  1. Add the yeast mixed with the remaining ½ cup of water or the ½ cup of liquid yeast.

  2. Mix thoroughly and let rise until it doubles in size.

Shape and bake

  1. Shape into a loaf and place in a standard-sized pan.

  2. Let it rise until nearly filling the pan.

  3. Bake for 45 to 50 minutes at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wheat flour
Provides the gluten structure that traps gas and gives the loaf its chewy shape.
Corn meal
Adds coarse texture and a mild corn flavor, with less gluten to hold the loaf together.
Yeast
Produces carbon dioxide gas during fermentation, which makes the dough rise.
Milk or water
Hydrates the flour and cornmeal so the dough can form and develop.

The step that matters

Cool the cornmeal mixture to room temperature before adding yeast. Yeast is killed or weakened by high heat, so adding it to the hot cooked cornmeal can stop the dough from rising properly.
