What each ingredient does

Strawberries
Provide the fruit flavor, color and body that the jam is built from.
Sugar
Adds sweetness and, with the fruit's natural pectin, helps the jam thicken and set.

The step that matters

Cooking until the desired thickness. Sugar and fruit pectin set as water evaporates and the mixture cools. Stopping too early leaves runny jam, while cooking too long can make it stiff and dull in flavor.
