What each ingredient does

Salt codfish
Provides the main savory flavor and the flaked fish texture of the chowder.
Salt pork
Renders fat that carries flavor and browns lightly to build savory depth.
Potatoes
Soften during boiling and thicken the chowder body with their starch.
Milk
Makes the creamy base and adds mild sweetness and richness.
Crackers
Soak up liquid and thicken the chowder slightly just before serving.

The step that matters

Soaking the salt codfish. Salt cod is very salty, so it must soak until soft and the excess salt has drawn out. Skipping or shortening this step leaves the chowder overly salty and the fish tough.

Swap the onion
