Baked Omelet with Greens

Ingredients

Directions

  1. Wash the greens thoroughly, then boil them in the least amount of water until tender, about 20 to 25 minutes. Drain and chop finely.

  2. Melt the butter in a saucepan, add the flour, and cook for about one minute.

  3. Gradually add the liquid while stirring constantly, cooking until the mixture is smooth and thick.

  4. Stir in the chopped greens and the egg yolks, along with the lemon juice or vinegar, mixing well.
