What each ingredient does

Strawberries
Provide the fruit flavor, pectin-containing body, and bulk of the jam.
Sugar
Sweetens the jam and helps it thicken and keep as it cooks.

The step that matters

Cook slowly until thickened. Cooking too briefly leaves the jam runny, while overcooking can make it stiff and caramelized. Sugar and fruit must reach a set point for the jam to gel as it cools.
