Why it works: Corn and wheat match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 465 recipes. Both carry hexanal, which smells green, grassy. The science ↓

Kafib Ooen Yeast Beead

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the mush

  1. Cook the Kafir cornmeal, sugar, salt, and water together in a double boiler for 1 hour.

  2. Add the butter and let it cool.

  3. Stir in the yeast mixed with a little water.

Shape and bake

  1. Add enough wheat flour to make a soft dough (about 1 cup).

  2. Turn the dough onto a board and knead thoroughly.

  3. Form into a loaf and place in a warm area to rise.

  4. When it has risen, bake in a moderate oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Kafir corn meal
Provides the main body and corn flavor of the bread.
Yeast
Produces gas that makes the dough rise and become light.
Wheat flour
Adds gluten so the soft dough can be kneaded and hold its shape.
Butter or lard
Adds fat that softens the crumb and gives a tender texture.
Sugar
Feeds the yeast and adds a little sweetness and browning.

The step that matters

Cool the cooked mush before adding the yeast. Yeast is killed by high heat, so the mush must cool enough before the yeast is stirred in to keep the dough rising.
