How to Boil Fish

Ingredients

Directions

Prepare

  1. Bind the head of the fish with broad tape to prevent the cheeks from breaking.

Boil

  1. Place the fish in a kettle of cold water with salt, sweet herbs, vinegar, and horseradish.

  2. Bring the water to a boil and maintain a gentle boil for about 30 minutes.

  3. Check if the fish is done by inserting a fish slice at the back bone; the flesh should lift off easily.

  4. If cooking spawn or liver, place them beside the fish in the kettle.

Serve

  1. Garnish the boiled fish with scraped horseradish and serve the liver and roe on the side.

What each ingredient does

Fish
Provides the flesh that is cooked gently until it lifts easily from the bone.
Coarse sea salt
Seasons the poaching water so the fish is flavoured as it cooks.
Vinegar
Adds acidity to the poaching water, giving the fish a sharper, brighter taste.

The step that matters

Maintain a gentle boil. A vigorous boil agitates the fish and can break the delicate flesh and cheeks. A gentle simmer cooks the protein evenly and keeps the fish intact.

Swap the horseradish

How well each one fits the dish's main ingredients (fish, vinegar):

  1. Cucumberfits better
  2. Mustardfits about as well
  3. Horseradishthe original
  4. Capsicumfits about as well

Fit is the average pairing score against fish, vinegar. Candidates are from the same food group and used in at least 100 recipes.
