How to Broil Fish

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the scales from the fish carefully without damaging them.

  2. Take out the insides but keep the gills.

  3. Separate the liver from the waste and wipe the fish's body with a clean cloth.

  4. Replace the liver and sew up the belly.

  5. Wrap the fish in paper and broil it at 400°F (200°C).

  6. Serve with plain melted butter.
