What each ingredient does

Milk
Its casein proteins coagulate into curd when acidified and heated, forming the main structure.
Vinegar
Its acid lowers the milk's pH, causing the casein to coagulate and separate from the whey.

The step that matters

Heat gently until the milk coagulates. Heating too hard or too long can make the curd tough and grainy, while gentle heat lets the casein clump into soft, cohesive curds that separate cleanly from the whey.
